Spread bike joy! Bring some holiday cheer to your cycling friends and family with these delightful bike wheel cookies. Perfect for cookie swaps or gifting to your favorite riders, these treats combine festive charm with a love for biking.
The Po Campo team is spread out all over the world, so this year we came together remotely to individually bake these creatively festive cookies that showcase our bike love.
With a simple sugar cookie base and creative icing designs, these cookies are as fun to make as they are to eat - whether you’re pedaling through winter or dreaming of your next ride.
WHAT TYPE OF COOKIE
To make these bike wheel cookies, start with your favorite recipe for any of the following types of cookies:
Any plain round cookie with no bumps or visible ingredients (sorry chocolate chip lovers!) will work well. If you’re making a chocolate cookie or anything with a dark color, be sure to use a light toned icing (white or a light pastel color).
SUPPLIES
- A dozen or more round, flat cookies
- 2 colors of store-bought tube decorating icing (regular or gel) or icing and a fine piping bag for delicate handiwork
- Plates for sharing the cookies with friends and family
- Cotton swabs for cleaning up any icing mistakes
HOW TO DECORATE
COOL - Allow your cookies to cool completely before decorating. That will ensure your icing doesn’t get runny and you can easily clean up any icing mistakes you make.
ICING - If decorating isn’t your strong suit (like some of us on the Po Campo team), or if you’re decorating with kids, we recommend getting a tube of writing icing - it’s easier to handle.
DECORATE - Our Bike Wheel Cookie design features a simplified bike wheel to make it easy. We were able to decorate ours with the help of little kids and they turned out pretty well!
How many lines you add depends on how big your cookies are. If you have the room to add additional lines, it will look even more like a wheel.
- Start by making an icing circle around the circumference of the cookie.
- Next, make a line across and a line up and down, dividing the shape into quarters
- Add additional lines on the diagonal.
- Using a different icing color, make a small circle in the center of the cookie. If your cookies are small, this can also just be a big dot of icing.
COLORS - You can alternate colors as you wish and get creative with your design.
FIX MISTAKES - Along the way, if your hand slips and you make an icing mistake, you can clean it up with a cotton swab. You may need to dip your swab in a light amount of water to make clean up easier. Be sure not to saturate your cookie with water.
DELIVER YOUR COOKIES
Arrange your cookies on a festive plate in a single layer. To add a festive touch, place a few sprigs of rosemary, holly, evergreen or other greenery on the plate. Removing the bottom 1/3 of the sprigs will create a more refined, tree-like style.
Carefully transport your cookie trays to friends and family and present them with a dose of bike love.
